Growing up in the Midwest, I can remember very hot, humid summer days. We liked to play outside, getting as dirty as possible and splashing in the creek. Mom had a big garden where she grew beans, tomatoes, cucumbers, peppers and more. After a long day out in the sun, sometimes we would have fresh tomatoes, cucumbers, and cottage cheese for supper. I’ll never forget those hot summer days.
This recipe is the perfect side dish or afternoon snack for those hot summer days. Keeps in the refrigerator for about 5 days.
Tomato & Cucumber Salad
3-4 tomatoes, cut into wedges
1-2 cucumbers, peeled, sliced, then cut in half
1 sweet/banana pepper, diced (optional)
1/4 cup green onions, diced
2 tablespoons fresh basil, cut into small pieces
1 teaspoons each: parsley, rosemary
enough olive oil to toss salad in
salt and pepper, to taste
Combine all ingredients in large bowl, toss well. Chill for at least 30 minutes.
