Eggplant Parmesan

Eggplant isn’t something we have often. I’ll admit it’s not really my favorite. Do you have eggplant in your house?
1 eggplant, peeled
2 eggs
1 cup dry breadcrumbs
1/4 cup basil
raw cheese, enough slices for each eggplant
S&P to taste
Preheat oven to 400. Rub your favorite fat onto two baking sheets (butter, bacon grease, coconut oil). Slice eggplant into 1/4 inch slices and dip into egg. Then dip into breadcrumbs, completely covering eggplant. Arrange eggplant into single layer on baking sheet. Bake 12 minutes, then flip eggplants and bake another 12 minutes. Add marinara sauce, basil, and cheese atop each eggplant and bake another 15 minutes.
