Homemade Tomato Soup

We are lovers of tomato soup in our home! Our panty was never without Campbell’s Tomato Soup. Throw it in a pot, add some water, slap together a grilled cheese and supper was done! It was good, obviously, or we wouldn’t have it once a week during the winter. However, it was when my husband started adding spices and other things to our soup that I started thinking, why not make our OWN tomato soup.  Something more than a can full of tomato concentrate and high fructose corn syrup. I’m embarrassed to say that I was honestly surprised that junk was in tomato soup!

Homemade Tomato Soup

2 garlic cloves, minced
1 tablespoon butter
28 ounce can organic crushed tomatoes
28 ounce can organic whole tomatoes
2 cups vegetable stock or bone broth
1 teaspoon honey
1/4 cup cream
2 tablespoon basil
salt and pepper to taste

In a saucepan, saute garlic in butter on medium heat for 1 minute, take care not to burn the garlic!  Add the crushed tomatoes followed by the whole tomatoes.
Using a potato masher or immersion blender (I love this small appliance!), crush tomatoes. Be sure to add the tomato juice.  Add veggie stock, salt, pepper, basil, and honey.  Cook the soup on medium at a simmer for 10 minutes.  To finish, reduce the heat to low and stir in heavy cream.

Tomato soup is always accompanied by grilled raw cheese on sourdough. What about you, how do you like your tomato soup?

  1. We are tomato soup lovers also. Uncle Terry is a campbells fan and only likes my homemade chicken noodle or veg. soup over Campbells. I had some left over tomatoes once and added to the canned. Terry thought I ruined it. I think Gpa Red thought the same thing but he isn't as quick to critize the cook as Uncle Terry is 🙂 aunt bev

  2. I had never had homemade tomato before, and honestly we were a bit leery as well. We love it though, since I found the recipe about a month ago we've had it about 4 times!
You tell that Uncle Terry he'd better straighten up or he can make his own supper! 🙂
