Sticky Trail Mix

 

My sister shared some of her homemade trail mix with us last weekend, and let me tell you….delicious! Oh, it was good. I have it in a little tupperware on my counter and I might grab a little handful every time I walk by. And when I say “might”, I mean I do.

Obviously, trail mix, like granola, can be made a million ways. You can make this recipe exactly as I have posted or feel free to tweak to your tastes. Double up on the blueberries if you can’t find cranberries. Trail mix is a great snack to have around. Stuff it full of dried fruit and nuts!

Sticky Trail Mix

1/2 cup of each: raw walnuts, almonds, pecans, and sunflower seeds
1 tablespoon each: vanilla and coconut oil
1/4 teaspoon each: cinnamon, nutmeg
1/4 cup raw honey
1/2 cup of each: chopped dried apricots, dried cranberries, dried blueberries

Preheat oven to 350F

Roughly chop nuts and mix with seeds, coconut oil, vanilla, cinnamon and nutmeg.  Spread on cookie sheet. I like to put the nuts in a baggie or tea towel and roll over them with a rolling pin or just beat them against the counter. Yes, really.
Toast in oven 2-5 minutes.  Stirring occasionally to be sure the nuts and seeds are merely toasted, not burned.  (KEEP a watchful eye).
Take pan out of oven, let cool. Drizzle with honey.  Toast 5 minutes.  Stir often, and keep oven door cracked while toasting.
 Remove from oven.  Mix in apricots, cranberries and blueberries.   Let cool.  Then enjoy!

Also, instead of using the microwave to melt your coconut oil, you can put your desired amount into a pyrex measuring cup and stick it in the oven while the oven is preheating. Coconut oil has a very low melting point (76 degrees), so it goes fast-without the harmful effects of the microwave!

  2. Jill, great idea! Honestly, I haven't made the recipe myself and I probably wouldn't have thought about doing that with coconut oil (although I'm like you, I try to use the microwave minimally).
    Also, I have got to apologize. I thought you were a different Jill (a HS coach of mine) until Brianne mentioned that she saw one of your comments on here. So I wanted to see who this “Jill” really was, I took a look at your blog. I really enjoy your posts! Thanks for your support.

  3. Opps, I forgot, I did add in ground flax seed. 🙂

    I am not sure about how much it makes. I doubled the recipe and it made a bunch-I would say almost a gallon sized ziploc full.

    I agree with you Jan, I didn't like the pumpkin seeds either. I will probably cut those out next time!
