Cauliflower is not a vegetable we have often in our house. What about you, do you like cauliflower? I love broccoli. What that has to do with cauliflower, I don’t know. Maybe because they both look like trees. Yeah, that’s it. Broccoli are trees and cauliflower are albino trees.
Let’s move on. This simple baked cauliflower dish gets exponentially more tasty by adding curry powder.
1 head cauliflower, cut into bite-sized pieces
1/4 cup coconut oil
3 garlic cloves, minced
2 teaspoons curry powder
1/4 teaspoon each: chili powder, red pepper flakes
Preheat oven to 350. Combine oil, garlic, curry, and all other seasonings in large bowl. Add cauliflower and get your hands dirty, mix until well coated. Spread into baking dish. Bake for 25-30 minutes until tender and tops begin to brown.
