Freezable Breakfast Burritos

Having something to pull out of the freezer for a quick meal is awesome. Especially when your husband is out the door by 4 AM and he loves breakfast.

Solution: Freezable Breakfast Burritos.



Ingredients
3-4 russet potatoes, peeled and cubed and shredded into hash browns
1 bell pepper, chopped
1 onion, chopped
1 c. spinach
1 pkg. pastured bacon
1/3 cup salsa
8 eggs, pastured
raw cheese
S&P
tortillas*

Let’s Get Started
First, place bacon in skillet and cook thoroughly. Meanwhile, prepare the potatoes. Remove bacon and cook potatoes in the grease (remove some if there is too much and save for cooking eggs).

Add onions and peppers to a large skillet over medium high heat. After 3 minutes, add the egg mixture and cook thoroughly, adding spinach a few minutes before the eggs are done.

In a large bowl, rip up bacon, then add potatoes, and egg mix. Mix and add salsa, cheese, and seasonings.

Fill one tortilla at a time with mixture. Tuck the sides, roll your stuffed tortilla into a burrito. Wrap it with foil and place on your cookie sheet. Repeat until you’re out of tortillas or filling.

Now, we are going to flash freeze these burritos. What’s flash freeze? Well, they should be laying flat on your cookie sheet and by placing them in the freezer for 1-2 hours (or overnight if you forget) you will freeze them individually so they don’t freeze together once you place them in a freezer bag.

After a couple hours you can place them into freezer bags and put them up. If you have access to an oven, then keep them foiled and bake at 400 for 25 minutes or so. My husband has to use a microwave at work, so he just removes the foil, places burrito on a small plate and cooks them for 2 minutes at 50% power.

*A note on tortillas, I have tried 4 different recipes, none of which are consistently flexible and delicious. I look for organic soaked tortillas.

    b-fast on Sunday. They were a hit with the hubby! So I think I may make some to freeze. Great idea…and makes b-fast fast and easy!

  2. The convenience of them is what makes spending 2-3 hours prepping them all worth it. Getting up at 4 is hard enough without having to pack a lunch and make a breakfast too, totally worth it! I usually make 15-18 at a time and just throw them in his lunch box. 🙂
