Pumpkin Oatmeal (+How To Soak)

It’s beginning to feel like fall on the West Coast. We may not get snow in a few months, but the air has a nice crisp to it anyway.

To welcome the cooler air, I made an oatmeal with all my favorite fall time flavors: pumpkin, cranberries, pecans, maple. Interested yet?

The hardest part was bringing all the flavors together, now that you know what goes in it, you will be ready to make this oatmeal everyday until March!

1 Serving:
1/3 c. oatmeal
1/3 c. water
1/3 c. almondmilk
1/4 c. 100% pumpkin
handful broken pecans
handful dried cranberries
1 t. cinnamon
100% organic maple syrup

Add all but the syrup to a small saucepan and cook over medium heat until thick. Place in your favorite bowl and drizzle with syrup.

Bam. There you have it.

To make your oats even healthier and with just a little pre-planning, soak 1 cup of oats in 2 cups of filtered water and 1 teaspoon of apple cider vinegar. Do this overnight and cook in the morning.

  1. Oh, thank you! It really really is. I've had it almost every day for about a week. I fixed it for Kevin the other day when he was off work and he said it was the best oatmeal he'd ever had. It's a fall and winter time keeper in our house for sure! (I'm having some right now too) 🙂
