This recipe was inspired by my husband’s love for the canned “cranberry sauce”. Yes, that is what he would ask his mom for when we came to visit for the holidays. Blagh.
I made it my own personal mission to come up with a cranberry that he would love. Love enough to forget, forever, about that canned junk. I wanted something that was chunky (aka real), sweet, tart, and fresh.
I believe I accomplished that with this recipe.
Real Food Cranberry Sauce
6 dates, pitted
12 ounce bag fresh cranberries
1 pear, cored and diced
1 apple, cored and diced
1/3 cup raisins
1/2 cup chopped walnuts
2 teaspoons cinnamon
1 teaspoon nutmeg
First, place dates in bowl of food processor and cover with water. While dates are soaking, add cranberries to a pot, cover with water, and allow to boil. Process dates in the water until smooth.
When most of the cranberry skins have burst, add dates and remaining ingredients. Simmer for about 10 minutes or until the sauce is nice and thick.
