Summer calls for cold salads, and not just the leafy green kind. Salads are anything that’s covered in a dressing and this Curried Chicken Salad is a winner! The dressing consists of mayonnaise and curry powder, and if you’re looking for a cool, easy lunch then this recipe is for you.
Unlike my Colorful Chicken Salad which relies on the added ingredients for not only color but flavor too, this salad gets most of its flavor from the dressing. Curry powder has a distinct flavor and is a blend of several spices. Have you tried making your own yet?
The crispness of the celery, crunch of the cashew, and sweetness of the raisin come together for a light, refreshing salad. Perfect on its own or great as a sandwich or with crackers, this recipe will find its way into our fridge through the summer and into fall.
Curried Chicken Salad
rounded 1/4 cup mayonnaise
rounded 1 tablespoon curry powder
3 cups cooked chicken, shredded or cubed to preference
1/2 cup celery, chopped
scant 1/4 cup scallion, chopped
1/2 cup cashews
1/3 cup raisins
S&P, to taste
Combine mayonnaise and curry powder in small bowl, stir well to combine. Set aside.
Throw chicken, celery, scallion, cashews, raisins into large bowl. Mix well. Stir in mayonnaise, add salt and pepper. Taste and add more S&P to liking. Allow to cool in refrigerator for at least 2 hours or overnight.
Enjoy as is or have as a sandwich or with crackers.
