Make it at Home: Larabars

Have you tried Larabars yet? If so, then you will know exactly why I wanted to make them myself. They’re delicious. And they have minimal ingredients to boot. Most of them are made up of dates and nuts with a few ingredients, like cinnamon and salt, to flavor.

As much as I love those bars, I can’t always pay $1.25 each for them. If I’m in a time crunch, I’ll pay that much, but I’d rather make them myself. You only need a few ingredients in your cupboard.

 

Homemade Larabars: A Two Step Process

Process dried fruit into a paste
Process nuts into small crumbly/gritty mixture

In a little more detail, once your fruit is a ball of goo, process nuts. Any water is added at this point, and add peanut butter toward the end of processing the nuts. Combine fruit paste and nut mixture together in a bowl, add in extras and get your hands dirty, mixing everything together. We enjoy eating them as balls, but you can make them into bars.

Peanut Butter Cookie

1 cup dates, pitted
1/2 cup cashews
1/2 cup peanuts
2 tablespoon peanut butter
pinch cinnamon

Blueberry Pancake

1 cup dates, pitted
1 cup cashews
2/3 cup dried blueberries
2 teaspoons water

 PB&J

1/2 cup dried cranberries
1/2 cup dates
2/3 cup peanuts

Cashew Cookie

1 cup dates
2/3 cup cashews

Cherry Almond Crunch (+Chocolate*)

1 cup  pitted dates
1 cup dried cherries
1 1/4 cup almonds
*Chocolate Cherry Almond Crunch: add 1/4 mini chocolate chips to the bowl before mixing fruit paste and nuts.

Nutty Mango*

1 cup dried mango
1/2-2/3 cup walnuts
2 teaspoons almond butter
1 teaspoon coconut oil
*This recipe was given to me by a friend, I have yet to try it. The amounts are approximations.

Pecan Pie Bites*

1 cup dates, pitted (approx. 24)
2/3 cup pecans
dash salt, cinnamon
splash pure vanilla extract
*Okay, honestly these are my all-time favorite! I never liked pecan pies, they were entirely too sweet for me, but these. These are sweet and fantastic, gooey and crunchy. Fabulous. Must try! Make these instead of pecan pie at Thanksgiving, they are that good.

  1. Love the variety with these bars! I have always wonder if my blender is comparable to a food processer. I will have to try it and see! Do you need to put these in the fridge?

  2. Thank you. I plan on trying several different types, it's just a matter of time. This post will be growing for awhile.
    Also, no, I wouldn't recommend putting these in the fridge. They don't need to be, nothing in them will spoil and doing so will make them hard and change the texture.
